HELP! There's a VEGAN Coming For Dinner!


Kitcheri  - Urad Dhal with Rice  (from HELP! There's a VEGAN coming For Dinner)

If you want, you can cook the rice along with the lentils. Use 2 cups of uncooked rice and 4 ½ cups of water. I prefer to cook my rice separately in my trusty rice cooker so that if my lentils take longer to cook than expected the rice doesn’t get soggy.

1 cup white split urad dahl

2 tbsp vegetable oil or ghee

1 large onion, finely chopped

2 tbsp grated fresh ginger

1 large carrot, peeled and grated

2 jalapeno chillies, finely chopped

1 tsp cumin

½ tsp ground fenugreek (methi)

2 bay leaves

½ tsp cinnamon

1 tsp turmeric

1 cup green beans, trimmed and chopped

1 tsp salt

3 cups water

3 cups hot basmati rice (cooked with 1 tsp turmeric and 1 tsp cumin)

Serves 4

1. Wash the urad dhal multiple times and then soak them in cold water for 30 minutes - 1 hour. (Check your packet for specific instructions on how to prepare and cook the brand you buy.) Rinse again and drain.

2. Heat the oil in a medium pan and cook the onion, ginger, carrot and chillies over a medium heat for about 10 minutes or until the onion is soft and golden brown.

3. Stir in the lentils, cumin, fenugreek, bay leaves, cinnamon, turmeric, green beans, salt and water. Bring to the boil, reduce the heat, cover and simmer gently for 30 minutes or until the lentils are soft.

4. If there is any excess liquid, drain it off. Mix the lentils with the hot cooked rice and serve.
