Cabbage with Spices

I like to buy bags of pre-chopped coleslaw rather than buying an actual cabbage and chopping it up. Sometimes it contains red cabbage, sometimes it contains carrots, and sometimes it contains nothing except white cabbage. Either way, I’m happy.

If you want it hotter, add a sliced jalapeno chilli along with the onions.

3 tbsp vegetable oil

1 tsp fennel seeds

1 tsp cumin seeds

1 tsp mustard seeds

1 large onion, coarsely chopped

½ tsp dried red chilli flakes

1 tbsp fresh ginger, grated

4 cups shredded cabbage

1 tsp salt

Serves 4

1. Heat the oil in a large frying pan then add the fennel, cumin and mustard seeds. Fry for 1 minute then add the onion, chillies and ginger. Fry over a medium heat until the onion is soft - about 5 minutes.

2. Add the cabbage and stir well. Cook over a medium heat for about 10 minutes or until the cabbage is slightly softened. Stir in the salt and serve immediately.
