Method
- Press and cube tofu.
- (Optional) Sauté onion, garlic, and bell pepper until fragrant.
- Add everything (except peas/corn) to crockpot and stir gently.
- Cook on Low 4–6 hours or High 2–3 hours.
- Stir in peas/corn 20 minutes before serving.
- Serve hot over rice, pasta, or bread. Enjoy!
