Vegan Pretzels with a Hint of Cardamom

Ingredients
  

  • For the Dough
  • 1 ¼ cups warm water 110°F
  • 2 tbsp sugar
  • 1 packet active dry yeast 7 g
  • 2 tbsp melted vegan butter or neutral oil
  • 4 cups all-purpose flour
  • ½ tsp ground cardamom use ¾ tsp for stronger flavor
  • 1 tsp fine salt
For the Baking Soda Bath
  • 5 cups water
  • ¼ cup baking soda
For Topping
  • Coarse sea salt for savory pretzels
  • Optional: melted vegan butter for brushing
  • Optional sweet topping: cinnamon-sugar mixture ¼ cup sugar + 1 tsp cinnamon

Equipment

  • Large mixing bowl
  • Wooden spoon or stand mixer with dough hook
  • Kitchen towel or plastic wrap
  • Baking sheet
  • Parchment paper
  • Large pot for baking-soda bath
  • Slotted spatula or spoon
  • Oven preheated to 450°F (230°C)

Method
 

  1. Whisk warm water and sugar; sprinkle yeast; let foam.
  2. Stir in melted vegan butter and salt.
  3. Add flour and cardamom; mix until dough forms.
  4. Knead 3–5 minutes until smooth.
  5. Cover and rise 1 hour.
  6. Shape into pretzels.
  7. Dip each in boiling baking-soda bath for 15–20 seconds.
  8. Top with salt or sugar and bake at 450°F for 10–15 minutes.

Notes

If you don’t have cardamom, try a pinch of cinnamon or nutmeg — but cardamom really shines here.

  • Brush with vegan butter for shine and softness.
