Vegan Slow Cooker Tofu Tikka Masala (High-Protein)

Ingredients
  

  • 1 block extra-firm tofu pressed & cubed
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 2 carrots sliced
  • 1 ½ cups potatoes or 2 cups cauliflower
  • 1 can tomato sauce 15 oz
  • 1 can coconut milk 15 oz
  • ½ tbsp maple syrup
  • ½ tbsp grated ginger
  • 2 tsp garam masala
  • 2 tsp coriander
  • 1 ½ tsp cumin
  • ½ tsp turmeric
  • 1 tsp paprika
  • Pinch of cayenne salt & pepper
  • Optional: peas cilantro, lemon juice

Method
 

  1. Add all ingredients (except peas and lemon juice) to a slow cooker and stir well.
  2. Cook on high 3–4 hours or low 6–7 hours until veggies are tender.
  3. Stir in peas near the end, season to taste, and finish with lemon juice.
  4. Serve hot over rice or with naan. Garnish with cilantro.
